Recipe: Valentine’s Strawberry Maca Smoothie

It’s that time of the year where I love making as many foods pink as I possibly can!

The strawberries, raspberries, and beet powder are what make this smoothie such a vibrant pink color - but this smoothie is more than its looks, it is a nutritional POWERHOUSE.

This smoothie has Brazil nuts which add 272 micrograms of selenium - well above the recommended amount of this essential trace mineral. Selenium acts as an antioxidant and assists in healthy glucose metabolism. This smoothie is creamy and delicious without any milk because those brazil nuts emulsify in the blender! YUM. I recommend buying brazil nuts (and other nuts for that matter) in bulk from Costco.

Tip: Be sure to get un-roasted because many nuts are roasted in seed oils.

Makes

1 serving

Prep Time

5 minutes

INGREDIENTS

  • 1/2 cup frozen strawberries

  • 1/4 cup frozen raspberries

  • 1/2 cup frozen cauliflower florets

  • 4 Brazil nuts

  • 1 tablespoon chia seeds

  • 1 tablespoon maca powder

  • 2 teaspoons beet powder

  • 1/4 teaspoon vanilla extract

  • 1/4 teaspoon ground cardamom

  • Juice of 1/2 lemon

  • 1 scoop of your favorite clean vanilla protein powder (I love Truvani, BeWell By Kelly, Vital Proteins, and Garden of Life Collagen)

 

DIRECTIONS

Place all of the ingredients in a blender with 1 cup water and blend for 30 seconds at high speed, or until smooth. Serve immediately. Enjoy!!
